All bread products are handmade in small batches. We use organics seasonal and ethically sourced ingredients.

Each loaf is fermented for a minimum of 24 hours using wild yeast sourdough culture and baked in a brick oven to a dark brown for deep flavor. No conditioners or preservatives are used. The fermentation process of yeast and bacteria predigest the starches and break down the gluten protein, making the bread highly digestible, not to mention delicious.

You sourdough is pleasantly but not overly sour.

The Starter

Nothing beats a true sourdough starter, which can be cultivated from naturally occurring yeast and bacteria around us.

There are many different terms that refer to a starter, such as "sourdough" , "mother", "leaven" in French "Levain" in Italian "Lievito Madre", but all of these words mean the same thing: Living, breathing, and eating culture of healthy bacteria that helps break down the gluten.

Natural starters bring out the nuanced flavors of heritage wheat and also add the touch of tang and sweetness that we crave in sourdough - style artesian bread.

In the started the wild natural yeast and lactic acid bacteria are produced. All this natural slow chemistry give to the bread its high nutritional value, digestibility and of course it's distinctive tangy flavor. Sourdough fermentation produces changes in the bread that may allow for better blood sugar control.
